MADRE Restauraunt is seeking both an AM Prep Chef and a Garde Manger cook.

MADRE is a hospitality driven restaurant in Greenpoint, Brooklyn. We are looking for the right people to join our young team and help us grow as the summer and outdoor dining season approaches yet again. Experience is preferred but a positive attitude and willingness to learn is a must.


BOH QUALIFICATIONS/REQUIREMENTS

-Passionate about restaurants and growing in a company
-Driven, hardworking and enthusiastic
-Strong communication skills
-Ability to lift 50+ LBS

JOB RESPONSIBILITIES:

Prep Chef: (40 hours, 4 days [flexible times available])
-Receive, organize, and properly label deliveries to NYC DOH code.
-Ability to work indepentently and efficiently.
-Prep vegetables, large batch items, and assist in daily mise en place.
-Prep shellfish and other proteins
-Pasta production
-Keeping a clean and organized station, and overseeing both walk in coolers for both HAACP and DOH standards.

Garde Manger: (Chef de Partie)
-Prepping and shucking for Raw Bar
-Light Pastry, classic pastry techniques and a few daily bakes.
-Introduction to sauce work and plating.
-Ability to set up consistent mise en place and daily tastings before service.
-Cool under pressure, but willingness to learn from mistakes.

We've done a lot of work with new culinary students and young cooks, so ability to learn and grow is really the most important. Our chefs and cooks have trained in great restauraunts around the world. Skills can be taught and our team is patient, and eager to teach.
