Culinary Manager/Chef:  Turner Farm Teaching Kitchen

Job Description

 

Position Title:       Executive Chef and Culinary Manager

Position Summary:

An on-site <50-person venue chef as well as Culinary Manager responsible for the day-to-day operations of the Turner Farm Teaching Kitchen.

In addition to preparing meals for private parties of up to 50 people, the chef will be collaborating with the Director of Events in coordinating the scheduling of the Teaching Kitchen to maximize exposure and availability.  As Culinary Manager of the Turner Farm Teaching Kitchen he/she will deliver educational content through daily demonstrations and classes, as well as utilizing social network to showcase current seasonal farm offerings, recipes, and preparations. 

The position will focus on effective teaching and retention strategies for clients both internal and external in nature with a pedagogical emphasis on the interconnectivity of cooking and nutrition.

With a state-of-the-art teaching and demonstration kitchen housed in an historic barn, in the middle of one of Cincinnati’s oldest and largest organic farms, of special importance is the Culinary Manager’s ability to connect with children and families. With the Turner Farm Teaching Kitchen having a close association with the local Center for Integrative Health & Wellness as well as the national Teaching Kitchen Collaborative, the Culinary Manager should be prepared to work with medical students and other medical professionals, and to deliver a superior educational experience.

 

Reports to: 

Executive Director of Turner Farm

 

Works with:

Turner Farm Event Coordinators, Outside Caterers, Media, Administrative Staff, Culinary Staff, Community, other Turner Farm employees as required.

 

Supervises:

Anyone or any group using the Turner Farm Teaching Kitchen space including but not limited to:  Assistants, outside chefs, outside caterers, class or event participants, external partners.

 

Essential Duties:

  1. Assisting, creating, and maintaining a schedule of educational programs that maximize the uptime use of the Turner Farm Teaching Kitchen. 
  2. Assisting, creating, and designing all Turner Farm Teaching Kitchen programs with a keen sensitivity to the specific needs of the local market and community demographic.
  3. Design and develop recipes focused on health and wellness initiatives using the most recent and relevant scientific and nutritional data available.
  4. Design and develop fundamental need-to-know nutritional classes using the most recent and relevant scientific and nutritional data available.
  5. Instruct private and public classes using the abovementioned recipes and nutritional concepts.
  6. Work closely with, and coordinate Turner Farm efforts in relation to the Teaching Kitchen with outside partners i.e., University of Cincinnati Center for Integrative Health and Wellness, Cincinnati Children’s Hospital Medical Center.
  7. Prepare and demonstrate on a weekly basis, general culinary demonstrations emphasizing good health and good taste in the public seating area of the studio barn.  Demonstrations will include tasting portions and typed recipes for handouts.
  8. Organize, coordinate and be responsible for all food, beverage, tool, delivery, receiving and storage in a timely manner.
  9. Prepare an annual financial budget.  Maintain costs, purchases, and waste in such a manner as to remain within the predetermined budgetary guidelines.
  10. Utilize the Turner Farm produce as a resource and teaching tool to emphasize the connection between nature, health, cooking, and good taste.
  11. Review the daily performance of culinary assistant(s) on a quarterly basis with a full review of performance and expectations on an annual basis.
  12. Plan, direct, tabulate and disseminate results of simple nutritional and epidemiological studies containing nutritional components relating to materials being taught in the Turner Farm Teaching Kitchen.
  13. Participate and/or conduct in-service educational sessions with professional staff and support services personnel.
  14. Work to coordinate community-wide standards of healthy eating emphasizing health and wellness concepts representative of the most current scientific and nutritional thinking.
  15. Participate in community events promoting the Turner Farm Teaching Kitchen goals. 
  16. Maintain the Turner Farm Teaching Kitchen, equipment, and related areas in an as-new condition 24/7.
  17. Work along with the Marketing Director to maintain and regularly update appropriate social networking pages relating to and in concert with the broader marketing efforts of Turner Farm Teaching Kitchen.

 

Qualifications:

  • Outstanding culinary demonstration skills
  • Culinary Arts Degree, Certificate or Diploma (AOS degree preferred)
  • Bachelor’s degree in public health, nutrition, dietetics, or related field
  • Demonstrated ability to connect with children & families.
  • Food Handler or ServSafe card
