Nestled along the banks of the Sugar River in the charming village of Paoli, Wisconsin, just
minutes from downtown Madison, Seven Acre Dairy Company is a historic cheese factory being
painstakingly restored and reimagined as a destination for modern travelers, discerning diners,
nature-loving families, and all those seeking an escape from the everyday. Once the restoration
is complete in the fall of 2022, we’ll be excited to welcome guests to this original destination
experience featuring a boutique hotel; restaurant and bar; cafe; and working micro-dairy,
making our own artisanal butter, ice cream, and cheeses from local farmers.


The property is now seeking an experienced Restaurant & Bar Manager at this one-of-a-kind property and business. Working closely with the Director of Food & Beverage, Chef de Cuisine and respective Department Managers, this role will immediately focus on ensuring that our service exceeds guest’s expectations by assisting in making sure all food and beverage coming from our signature restaurant and bar are well prepared regarding quality, consistency, eye appeal, and taste.


The incumbent is expected to provide training for all service staff; meet corporate quality standards; and assist in establishing and enforcing our standards of service and sanitation. The Restaurant & Bar Manager is also responsible for controlling labor costs while maximizing guest satisfaction.

Key Responsibilities:
Implements and maintains action plans and standard operating procedures to improve staff performance
Responsible for controlling expenses and labor to ensure adherence to the budget and sales volume by analyzing and interpreting reports and business levels
Performs other duties as assigned by management to ensure high levels of customer satisfactions through excellent service and operational efficiency
Work directly with the Chef and Director of Food & Beverage to ensure a thoughtful and attentive service in accordance with Seven Acre Dairy Company brand standards
Attend all meetings as required, and work with departments across SADC property to ensure staff and guest satisfaction
Assist with coordinating banquets and other special events, helping to build the program for within the restaurant space and on the property grounds
Responsible for maintaining a high energy, positive and professional atmosphere
Develop and implement creative strategies for revenue enhancement and cost containment
Manage teams: schedules, approve payroll, hire, train, disciplinary actions, reviews and motivate all employees
Work with management and marketing to develop and recommend, marketing plans and objectives and manage within those approved plans
Responsible for FOH smallwares upkeep, beverage program inventory and ordering
Assist with the development of beverage programs throughout the beverage outlets; collaborate with the culinary team to ensure beverage offerings are seasonal and complimentary to the menu items
Be a presence on the floor during peak service hours to ensure guest satisfaction to support a culture of enthusiasm, teamwork, and superior service amongst all department
Conduct pre-service meetings to communicate all service staff information regarding food and beverage special events, hotel information and local events
Maintain high standards of personal appearance and grooming
Implement and manage standard operating procedures for staff, continued staff training and development
Know and enforce all local health department sanitation laws
Responsible for the organization and cleanliness of the dining area
Assist with overseeing all aspects of the daily operation of the front and back of the house
Perform other duties as requested by management
Desired Qualifications:
Minimum of 5 years’ experience as Assistant Restaurant Manager or above in a high-volume restaurant or hotel / resort is preferred
Strong attention to detail and organized
Excellent leadership skills with a strong attention to details and a hands-on, lead-by-example work style
Ability to manage effectively in a fast-paced environment and manage multiple situations simultaneously
Must have knowledge of health department rules and regulations, liquor laws and regulations.
Must have ServSafe certification and Alcohol Operator License (AOL) or obtain within 60 days of hire
Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects
Must be able to effectively communicate both verbally and written, with all levels of employees and guests in an attentive, friendly, courteous, and service oriented manner
Must be able to multitask and prioritize departmental functions to meet deadlines
Maintain regular attendance in compliance with Seven Acre Dairy Standards, as required by scheduling, which will vary according to the needs of the property
Must be effective in handling problems, including anticipating, preventing, identifying, and solving problems as necessary
Must be able to maintain confidentiality of information












Salary and Benefits:
Annual base $60,000 - $70,000
