The Cook II – Canyon Lanes is a mid-level cook responsible for preparing a variety of menu items including soups, sandwiches, sauces, fried items, and medium-complexity entrées in accordance with established culinary standards. This position ensures food is prepared according to recipe, presentation, quality, and safety standards while maintaining a clean and organized kitchen environment. Working under the direction of the Cook I and Sous Chef, the Cook II demonstrates solid culinary skills, organization, and attention to detail while supporting kitchen operations to ensure efficient and timely food service.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Prepares food items according to recipes, portion standards, and production guidelines in a sanitary and timely manner.
  • Cuts, dices, portions, and prepares meats, vegetables, and other ingredients with consistency and accuracy.
  • Reads and accurately completes food order tickets in English to ensure proper preparation and timely service.
  • Prepares entrées, soups, sauces, sandwiches, and fried food items in accordance with established culinary procedures.
  • Operates kitchen equipment including grills, fryers, ovens, slicers, and other food preparation equipment safely and effectively.
  • Follows portion control guidelines and maintains proper food presentation according to Food & Beverage Department standards.
  • Monitors food quality, freshness, and temperatures to ensure compliance with food safety and sanitation standards.
  • Restocks ingredients, food products, and kitchen supplies throughout the shift to maintain workflow efficiency and operational readiness.
  • Assists with cleaning, sanitation, and organization of kitchen areas, equipment, walk-in coolers, storage rooms, and food preparation stations.
  • Maintains a clean and safe work environment by adhering to all health, safety, sanitation, and departmental procedures.
  • Supports team members and assists with kitchen operations during high-volume periods to ensure efficient service.
  • Communicates effectively with kitchen and front-of-house staff to ensure accurate and timely food preparation.
  • Performs other duties as assigned.

SUPERVISORY RESPONSIBILITIES:
This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.

QUALIFICATIONS:

  • Excellent verbal communication and interpersonal skills.
  • High attention to detail and accuracy in handling guest orders and transactions.
  • Must be able to stand and walk for extended periods.
  • Professional, guest-service-oriented demeanor with the ability to multitask in a fast-paced environment.
  • Previous experience in food service or cashiering preferred.

EDUCATION and/or EXPERIENCE:

  • High school diploma or equivalent preferred.
  • Minimum of 1 year of experience in food service, concession, or snack bar operations required.
  • Experience in a fast-paced, high-volume environment such as a bowling alley, arcade, or entertainment venue preferred.
  • Knowledge of basic food preparation, safety, and sanitation procedures.
  • Cash handling and point-of-sale (POS) experience required.
  • Strong customer service skills with the ability to maintain a friendly and professional attitude.
  • Food Handler’s certification required or ability to obtain upon hire.

LICENSES, CERTIFICATES, REGISTRATIONS:

Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.

LANGUAGE SKILLS:

Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

  • Communication Skills: Must be able to communicate clearly and courteously with guests, coworkers, and supervisors in person and occasionally by phone or intercom.
  • Lifting and Carrying: Frequently lifts and carries food items, beverage cases, and supplies weighing up to 25 pounds; occasionally handles heavier items such as bulk soda boxes or inventory with assistance.
  • Manual Dexterity: Frequently uses hands to handle food, operate a cash register or point-of-sale system, prepare snacks, and use kitchen utensils and small appliances safely and efficiently.
  • Mobility: Regularly moves throughout the snack bar, kitchen, and service areas; must be able to stand and walk for extended periods while performing duties.
  • Stationary Work: Occasionally remains in one area while operating food equipment or assisting guests at the counter.
  • Tool Operation: Regularly operates food preparation and service equipment, such as fryers, grills, ovens, beverage machines, and cash registers, following safety protocols.
  • Visual Acuity: Requires close vision for handling transactions, reading orders, and monitoring food quality and portion sizes.
  • Working Conditions: Regularly works in both food service and bowling alley environments, with exposure to moderate to high noise levels and a smoking environment.

WORK ENVIRONMENT:

This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.

WORKING HOURS:

Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
