Reports to: Kitchen Manager

At The Castle we aim to become legendary in the wider Central Florida region for our authentic Irish hospitality. We are dedicated to offering excellent Irish hospitality to every guest that decides to visit our Pub and Restaurant. Together with our vibrant and authentic Irish Bar, we will also be offering a full food menu with an emphasis on Irish and local cuisine. Our team will be at the very front of this guest experience creating a fun but always professional appearance.

Position Description:

Set-up, preparation, production, and service of menu items for a line station according to the menu specifications. Produce menu items according to standards and production levels. Perform all basic and intermediate cooking skills including preparation of soups, sauces, stocks, frying and broiling of food items.

Comply with Hazard Analyze Critical Control Point Program (H.A.C.C.P)
Prepare and serve all food items in accordance with local, state, and federal regulations.
Complete control of temperament and composure always (especially during peak service times)
Maintain organization, cleanliness and sanitation of work areas and equipment.
Read/follow menu, recipes and compute basic mathematical calculations.
Prepare food items listed on station prep sheet by following standardized procedures and recipes.
Produce food items that maintain consistency, presentation, quality, and taste.
Control, monitor and record waste, misuse.
Maintain inventory of food items of station and report shortages to the Chef
Minimum requirements:

Written and verbal communication skills in the English language
Previous experience in the capacity of a line cook, preferred.
Possess current state required licensing and certification (T.I.P.S and Food Handlers)
Work positively with a diverse team in a fast-paced and attention to detail environment
Possess critical thinking skills, be motivated, and focused on details.
Comply with all of the Castle’s policies, practices, and procedures.
Able to cope with stress of working in a high-volume service.
Must be able to work a flexible schedule.
